Dutch oven is a cooking appliance made from cast iron, cast aluminum or ceramic. It is a thick walled cooking pot with a tight fitting lid. This pot is called casserole dishes in British English and cocottes in French. This cooking pot is rather similar with Japanese tetsunabe and a traditional Balkan cast-iron oven called Sac, and also related to Potjie from South Africa and Bedourie oven from Australia. Dutch oven are first patented by Abraham Darby in 1708 after he accidentally witnessed people in Netherlands casting iron while on a trip there. In Netherlands, Dutch Oven is called braadpan, which means roasting pan. Dutch oven can be used either on the stovetop or in the oven because they can withstand an extremely high heat, Dutch oven can also be used in deep frying. Dutch oven is also popular among people who likes to go on camping. Here is some tips to cook using dutch oven in a camp. First, gather all your needed tools, such as long tongs, thick gloves, charcoal briquettes, a newspaper, a fire starter, and a charcoal chimney starter to light them. Second, prepare the fire, light 50 regular briquettes in a chimney starter and burn until spotted gray. When you want to cook quick meat dish, use tongs to spread the coals into an even layer at the top of the pot. When cooking stew, the heat coming from top and bottom. Use tongs to arrange some of the coals in a circle a little smaller than the circumference of the Dutch oven. You have to set the oven on top, then arrange the coals all over the lid. After that you have to check your food periodically to see if it was cooked yet or not.
Braiser is a cooking appliance which is wide, have a heavy bottomed pan, and also tight fitting lid. Braiser have wider bottom, which allows you to sear a large cut of meat. It is made out of heavy duty material with handles that can withstand oven use as well as high stove-top temperatures. When cooking with a braiser, meats and vegetables are first seared at a high temperature on the stove top. After the food are seared until brown, then liquid is added in a small amount, the lid is closed and the food is then braised (steamed) in the oven at a low temperature. The tight fitting lid will help preventing the meat to dry out and tenderize it while cooking.
Here is a recipe of Beef Bourguignon cooked using a braiser. First prepare the needed ingredients such as, boneless short ribs, bacon, bacon, onion, garlic, dry red wine, beef broth, dried thyme, bay leaf, frozen pearl onions, unsalted butter, fresh mushrooms, and all-purpose flour. First, preheat the oven at 350°F. Second, pat dry the beef and season with salt and pepper then set aside. Cook the bacon until crisp. Increase the heat to medium high and brown the beef. Third, drain the braiser and leave about a tablespoon of fat, reduced the heat into medium. Add the onion, garlic, bacon, wine, beef broth, thyme, and bay leaf and bring to a boil. Stir the food then bake the meat until tender for about two hours. Fourth, when it is about 15 minutes before the cooking time ended, cook the frozen pearl onions in a large saucepan. Then drain and melt a butter then cook the mushroom until tender, add the onion into the pan and cover. Fifth, transfer the beef from the braiser, remove the bay leaf, and pour the juices and solids from the braiser into a large cup to skim off the fat. Until you left with 2 cups of liquid intotal. After that return the liquid into the braiser and bring to simmer. Sixth, with the remaining butter and flour, make a beurre manie. Add beurre manie bit by bit into the cooking liquid, stir them to blend any lumps. Bring to a boil, and return the beef, add the onion and mushroom, and heat them up altogether.

Dutch oven look very similar to stockpot and saucepans, while braiser has a wide bottom and also shallow. Braiser is well suit for searing, browning, and sauteing. Braiser also can be used to do shallow frying and cooking any type of dishes which we might prepare using a frying pan or skillet. While dutch oven is more suited for cooking stews and boiling. From the price wise, dutch oven is far pricier compare to a braiser, a le creuset dutch oven is sold for $327.99 while a le creuset braiser is sold for $149.95. When choosing both of them it is wise to consider what kind of food you want to make using them. Because using different pot may change the taste of your cooking.
